Every vintage we manage to make our late-harvested
wine, we think of the meaning of work, tied to nature,
to its rhythm and its whims. The risk we take every year in
ripening the treixadura grapes moves in time to the steps
taken by our father when he left Galicia to start from zero.

Late harvest carried out in November.
ABV: 13º.
Soil: Sandy loam.
The winemaking process
Late harvest wine, made in years then the weather is right. The challenge starts with leaving 3,000 kilos of treixadura unpicked, to try to harvest about a third of them in late October. Taken to the winery and must extracted by delicate pressing with stalks. After two days of static clarification by cold settling, fermentation begins in stainless steel vats of about 550-600 L at controlled temperature, for 10-12 days. Once this is complete, it is drawn off into new 500 L French oak barrels to be aged for 5-6 months, stirring twice a week for 3 months. In April it is moved into stainless steel for clarification and filtering. Three months later, in July, it is bottled, to develop according to the opinion of the winemaker (about 2 years).

Visual stage
Clean and bright with slightly golden tones.
Olfactive stage
A clean aroma of good intensity. Hints of preserved fruit stand out, with notes of drying grapes, honey and herbal tea over a slightly toasty background.
Gustative stage
In the mouth it proves to be an enveloping wine, full of fruit and with a notable natural crispness.
Visual stage
Clean and bright with slightly golden tones.
